First Harvest



Big day here at my house!  Yesterday I went out to our little garden patch and picked the first two cucumbers.  By the looks of it, there will be so many more to follow.  I think this might be the time to call up my dad and get his cucumber salad recipe :)  I think in the next week we will be able to pick some tomatoes.  The peppers look "pickable" to me but that is my husband's food-he loves hot peppers!!

How do you like to eat your cucumbers?  Any delicious recipes?

  1. They look so wonderful Karen! I am very envious as ours are gone and we won't plant the fall garden until next month.
    I love them with a little vinegar splashed on them. I also like to throw them in smoothies or when I juice. Oh, and they are great sliced cold and put on your eyes when they are tired!

  2. Those look awesome! I like cucumbers thinly sliced and mixed in a sour cream dressing that has lemon, vinegar, salt, pepper and cayenne pepper. If you're interested, I'll email you the recipe. It's quite yummy.

  3. I love cucumbers -- fresh sliced by themselves! They are also great as part of salad. My mother used to put them in vinegar with chopped up onions -- I don't know why because they are better (to me) fresh. Enjoy your Thursday!

  4. We are just starting to get a few vegetables out of our garden... we had a really good rain the last two days....I am sure that will help us get our vegetables going.

  5. We add them to smoothies, juice them, hummus and cucumber sandwiches and simply sliced with sea salt.

  7. Somewhere I have a recipe for refrigerator pickles that are yummy. Haven't made them in ages. Maybe I need to dig it out! Thanks for the reminder.

  9. Yeah!!! I always get sooo excited with the first harvest......and then wonder what to do with the weeks and weeks and weeks of cucumbers!!! (I didn't plant any this year, but we're getting them in the csa box!). We like them in sour cream and pickles but always looking for something new!!!

  10. Yay! Congrats on that harvest. Our have started to grow now. I have to agree with Amanda. I also have a salad recipe that I think I posted on my blog and I think I got from Soulemama. I always have to look it up even though it's simple. It involves olive oil, sea salt, pepper, seasoned rice vinegar, and dill-I think.

  11. We love cold cucumber soup and a cold cucumber salad - both are simple but tasty. The salad can last for several days in the fridge.

  13. I'm jealous. Our cucumbers are only about and inch long right now! When they are ready to go, we have cucumbers in the fridge at all times. We eat them sliced. I make a cucumber salad with onions, vinegar, a little sprinkle of sugar and salt and pepper. We also do the sour cream and onions with a little bit of vinegar. One way we do them is with tamari, sesame oil, sprinkle of sugar and rice vinegar. I'm fairly certain that every way to eat them is my fave!

  14. Up until a few years ago my husband was running a large vegetable garden. There were cucumbers in the greenhouse; I don't think any I ever picked ever made it into the house, I just had to eat them straight away! (There were little ones though, I should mention) :)
