Soup and Thoughts


During the week I created the bestest soup recipe and thought you might like to try it.  Honestly, it is pretty good.  Now the problem is that my measurements are guesses and there is wiggle room for creativity.

Chicken Rice Cabbage Soup:

Chop one onion and three stalks of celery and saute in olive oil (guessing 1/8 cup??) once soft add 8 cups of chicken broth and one cup of frozen green beans.  Simmer for 20-30 minutes.  Add 1 cup of cooked rice, 1 cup of chopped cooked chicken, and 1/2 a head of chopped napa cabbage.  Stir and return to a simmer (you want to wilt the cabbage and not boil it to death).
Serves 4 very hungry people.

Then eat it all up!  My daughter coined it "Charlie Bucket Cabbage Soup" since cabbage soup was a staple in his household (Charlie and the Chocolate Factory by Roald Dahl).  My husband loved it only because the carrots were absent, he hates carrots in soup.

The house is quiet now that it's just the two of us again, well there is Frodo but he tends to be quiet most of the time.  There's a dusting of snow this morning that will surely melt by noon.  I have errands to run, bills to pay and a menu to plan for the week ahead.

    Glad you got a little snow, wish we had. I think spring is here in the south if the pollen is anything to go by..it's everywhere.

  5. Yummm-eeee! I love any form of chicken soup (as my family will attest to) but I do like this new spin with the addition of cabbage. Cooking a roaster tonight, so you know what that means....Charlie Bucket Cabbage Soup will be served later this weekend! Please tell your daughter she is on to something here ~ the grands will eat it up just for the name alone! We love Charlie.
