This and That
Hello! How are you doing? I'm happy to report that the freezing cold weather has eased up and we are now having regular winter weather. I wear 'regular' clothes on my walks and sometimes I have to take my mitts off because I get warm. It's wonderful.
The birds have ramped up their singing - a true sign of spring! Since the weather warmed up a bit, the crowding at my bird feeder off the back patio has eased up. In about a month I will switch to thistle feed only because the resident raccoon will be stirring and he/she lovely to eat the regular mix. I am gleeful when I outwit them.
Yesterday we had a stir fry for dinner. I don't follow a recipe, since it's made up but I use a mix of sesame oil and olive oil. The vegetables in this photo are Nappa cabbage, mushrooms, broccoli and snow peas. For seasonings I use ginger powder and an umami blend (salt free). In a bowl we place chopped cooked chicken at the bottom then a scoop of jasmine rice (hot to heat up the chicken at the bottom) then the stir fry on top.
I like kimchi on the side and some soy sauce but the possibilities are endless. We eat this at least once a week and it's great when you have leftover chicken or some tofu.
I am currently reading, Raven Black, Digital Minimalism, and Glory over Everything. My reading time has been scant but I do squeeze in some reading every day.
I continue to show up in my nature journal once a week and sketch something that comes to mind. Now that the weather is turning spring-like, there will be an abundance to write about.
The birdsong is just so brilliant right now... even Frankie pauses on walks to listen! :) We love stir fry here... I do much the same, a melange of veggies with a bit of protein! Yum! Have a great weekend!

ReplyDeleteWe do a lot of stir fry and, in fact, it is on the menu tonight with shrimp! Mostly veggies and a little protein works for us. The birds are singing Spring songs and our Red Wing Blackbirds are back! Fletch saw a very large raccoon on our patio the other night. I'm glad they are around, but I prefer them to keep their distance. Happy weekend!

ReplyDeleteYou remind me that one of the things I want to do this year is conquer tofu. I like to stir-fry veggies and then cook up rice or quinoa. Yours looks delicious.
